STUFFED ZUCCHINI WITH GOODY FOODY RED BURGER, BORDO SAUCE AND CARROT PUREE We used Goody Foody Red burger for the preparation.

  • 4.While the zucchini is baked, prepare a standard sauce of roasted caramelized onions: fry the onion finely until caramelized in butter (or oil), we can add 1 tablespoon of cane sugar. Add dry red wine and boil until most of the water evaporates.
  • 5.10 minutes before baking, moisten the pumpkins with a little burgundy sauce, sprinkle with fresh pumpkin seeds and season with colored spices.
  • 6.Carrot-zucchini puree: fry the sliced ​​carrots in butter or olive oil. Boil zucchini cuttings in salted water, to soften it is advisable to boil one smaller potato (diced). Pour hot water over the carrots and simmer for a while. We do not suffer for a long time so that they do not boil and lose color. Drain and mix together with potatoes and zucchini into a delicate, tasty puree.
  • 7.Before serving, lightly cover the plate with brown sauce, add puree and zucchini on it.
